Biodynamic certified
Limestone-clay slopes formed in the Kimmeridgian period by the first tributaries of the Seine.
100% Pinot Noir, made from a blend of grapes from several years of harvesting, which gives this cuvée a consistent quality. First fermentation in enamelled steel vats and second fermentation in the bottle according to the Champagne method.
Maturing 24 months on the lees on minimum indigenous yeasts of course.
Emblematic!
An elegant nose of rose and violet, morello cherry and redcurrant.
In the mouth, straight, round and generous, the bubbles are fine and the attack is fresh and announces a rich and delicate lamb's lettuce. It is honeyed and mineral with a beautiful structure and a persistent delicate fruitiness.
The balance is subtle, between suppleness and liveliness with notes of nougat. A beautiful substance and a touch of vinosity. A lively champagne, great art! Quite naturally.
